Mango Cardamom Cream Popsicles

With sweet, decadent mangoes in abundance all around here in India, I feel that it becomes almost imperative to make the most of it and make delicious summer recipes using it. Apparently, the Internet doesn’t need one more Mango popsicle recipe but this one is sure with a twist and a pleasant one at that. For sure, these delicious Mango Cardamom Cream Popsicles have the rich juiciness of the mangoes along with the smoothness of the cream. Along with that, the best part is the aroma and flavour that the addition of loads of cardamom/elaichi provides.

I think that homemade popsicles, despite the addition of sugar and cream, are healthier than store-bought packaged ones. Another good thing about making something at home is that you can customize the recipe according to your own taste preferences. For example, I also made a sugarfree version of these Mango Cardamom Cream Popsicles for my father as he has diabetes. Mango Cardamom Cream Popsicles

Description

Mango Cardamom Cream Popsicles have the rich juiciness of mangoes along with the smoothness of the cream and flavourful aroma of cardamom.

Ingredients

For Mango puree

  • 2 large ripe mangoes, peeled and sliced
  • 1 tbsp sugar (or according to taste)
  • 1 tbsp cardamom or elaichi powder
  • ½ cup milk

For Sweet Cream puree

  • ½ cup full-fat cream
  • 1 tbsp cardamom or elaichi powder
  • 1 tbsp sugar (or according to taste)

Instructions

  • First, in a blender add mango slices, cardamon/ elaichi powder, milk and sugar. Blend all ingredients to make a thick puree. Pour it out in a bowl and clean the blender jar.
  • Next, add full-fat cream, sugar and cardamon/ elaichi powder in the blender to make a puree.
  • Then, fill half of the popsicle mould with cream puree first. Let it freeze 1-2 hours until it sets in the mould in a semi-solid form.
  • Then, fill the other half of the popsicle mould with mango puree. 
  • Finally, freeze overnight or for about 12 hours and enjoy the Mango Cardamom Cream Popsicles chilled.
