These super healthy & delicious Fluffy Millet Pancakes are simple to make and are eggless, gluten-free, and sugar-free.

Ingredients

  • 34 ripe bananas
  • 1 cup foxtail millet flour (kaangni)
  • A pinch of baking soda
  • 1 tbsp baking powder
  • ¼ tsp cinnamon powder
  • ½ cup milk (dairy or plant-based)
  • 1 tsp vanilla extract (optional)
  • 1 tbsp butter
  • 2 tbsp honey or maple syrup

Notes

  1. Firstly, in a mixing bowl, add dry ingredients like millet flour, baking powder, baking soda, and cinnamon powder. Mix them well.
  2. Then, add mashed bananas, milk, vanilla extract, and whisk so that no lumps are created. Keep this batter aside for 10 minutes.
  3. Meanwhile, heat a pan on low heat and then grease it with some butter. Then, scoop out ⅓ cup of pancake batter and pour it onto the lightly buttered pan.
  4. Next, cook on low heat until there are small bubbles on the top and the bottom of the pancake is golden brown. Flip and cook the other side too.
  5. Finally, serve the delicious Fluffy Millet Pancakes by stacking them over each other and topping with some bananas, berries, peanut butter, or honey.

    1. Hi Lavi, thank you for your comment. Yes, you can also use Ragi or any other millet for making these pancakes. Of course, I have tested this recipe using foxtail millet, but I’m sure it can be replaced with any other flour too.

  2. You don’t mention when to put the maple syrup and honey. Is it meant to be included in the recipe or only served on top? Thanks!!

    1. I like the natural sweetness of ripe bananas in the pancakes. And when you drizzle maple syrup on top, the overall sweetness is perfect.

  3. I made these and they were yummy. Millet flour is a bit of a different flavor, but i like it’s help benefits. When i made almost the same recipe with oat flour, i didn’t use any maple syrup – for these I needed a little. I also added some choc chips and blueberries to them.

    How do I know how many calories for each. My batch made about 15 and i prob ate 5 or more already so I want to know 🙂

    1. Yes, millet flours have many health benefits but I’m glad the recipe works with oat flour as well. I’m sure it was delicious. I’m not sure about the calories though. You can calculate it on any online calculator. 🙂
