There’s something about the combination of Apples, Walnuts, and Cinnamon. It just goes so well together and makes for a perfect Autumn/Fall dish. Apple Walnut Chia Pudding Parfait is an ideal
Autumn/Fall breakfast cum dessert as it has the goodness and sweetness of apples with a little tart like flavor as well and then the smooth gooey chia seed pudding. The aroma of cinnamon and the crunchiness of walnuts just completes the dish.
INGREDIENTS –
For the apple jam –
- 2 apples, peeled and diced finely
- 1 cup pure apple juice
- 3 tbsp chia seeds (optional)
- 1 tsp cinnamon or daal chini, grounded or powdered
- a pinch of salt
- 1 tbsp jaggery
For the parfait
- 1 cup chia seeds pudding (check recipe notes to check how to make it or find alternatives to chia seeds are not available)
- 1⁄3 cup of walnuts and raisins, slightly chopped
- 1 cup apple jam (made
earlier in this recipe)
INSTRUCTIONS –
For the apple jam –
- In a pan add all the apple jam ingredients and cook on low flame.
- Reduce the mixture on low flame for 15 minute stirring it after every 5 minutes.
- Mash the around half of the apple dices and mix well
- Let it cool and keep aside to use in the parfait
For the parfait –
- In a glass create layers of chia seed pudding, walnut & raising and apple jam one after the other.
- Drizzle some honey in between layers for extra sweetness.
- Garnish with some more walnuts.
RECIPE NOTES –
- To make chia seeds pudding, add 1 cup of chia seed in a glass jar, add cup of milk and 1 tbsp of any sweetener like honey and mix well. Refrigerate it overnight and chia seed pudding is ready in the morning.
- For making this vegan, please replace regular milk with plant-based milk like almond, coconut or soymilk.
- If chia seeds are not available, you can also use overnight oats for this parfait.
