Veg Noodles

INGREDIENTS

For cooking/ boiling noodles –

  • 200 gm of noodles
  • 5-6 cups of water
  • 1 tsp oil
  • 1 tsp salt

For veg noodles –

  • 2 tbsp sesame oil
  • 5 cloves of garlic, crush
  • 1 inch ginger, grated
  • 2 green chillies, sliced
  • 1 large onion, chopped
  • 1 carrot, julienned or finely chopped
  • 1 capsicum, julienned or finely chopped
  • 1/4 cabbage,  julienned or finely chopped
  • 2-3 spring onions, chopped
  • 4-5 fresh beans, chopped
  • 1 tbsp vinegar
  • 1 tsp soy sauce
  • 1 tbsp tomato ketchup
  • 1 tsp black pepper, freshly ground
  • Salt to taste
  • Sesame seeds to garnish

 

INSTRUCTIONS

For cooking noodles –

  1. Boil water in a pan. Add noodles, salt and oil in it and boil till noodles become soft.

For veg noodles –

  1. In a wok or pan heat oil. Add ginger, garlic, spring onion and onion and saute until translucent.
  2. Add all veggies like carrots, cabbage, capsicum, spring onion and french beans and saute for 5 minutes on low heat.
  3. Add boil noodles.
  4. Add vineger, soy sauce and tomato sauce.
  5. Add salt and pepper.
  6. Garnish with sesame seeds and spring onions.
