On busy weeknights, we all crave for meals which are quick, simple, easy-to-make but most importantly delicious. These Chilli Garlic Noodles tick all those boxes. These glossy aromatic noodles are so rich in flavours and leave a lingering umami flavour in your mouth. I bet you won’t be able to resist a second serving.
I kept this recipe true to its name – Chilli Garlic Noodles, so the main ingredients are Chilli, Garlic and noodles. I couldn’t however resist adding some thinly sliced onions. Because they go so well with garlicky noodles and their sweet-ish caramilised flavour balances out the spice. If you like you can add more veggies in this stir-fry like bell peppers, cabbage, carrots, mushrooms. Just cut them in long, thin julienne style. For veg protien, you can add tofu in this dish as well.

Tip and Tricks
- Garlic – this recipe requires a lot of garlic. In order to have a nice aromatic garlicky flavour but not let it overpower the dish, you need to saute sliced garlic in sesame oil on medium-low heat until they are golden brown. This will diffuse the flavour in oil which will coat the noodles later. Also, the garlic slices will become tender and you won’t even notice them while eating.
- Chilli – the chilli part of this recipe comes from two sources – red chilli flakes and sriracha sauce (or any hot sauce). The palate for hot food differs in different people so you can adjust the chilli levels according to your taste.
- Noodles – You can use practically any kind of noodles here. Asian noodles like Hakka, ramen etc work well and guess what, so does spaghetti.

Keep the following things in mind –
1) Don’t overcook the noodles. Just take off the stove before they’re almost done. Let them cook the rest in the sauce.
2) When noodles are done boiling, drain them and run them under cold water or transfer them in ice water bowl. If you leave them in hot water or strain them and they’re still hot, they will keep expanding and will stick to each other.
You can refrigerate the leftovers in an airtight container for 2 days. It can also be freezed in a high qualily freezer friendly container or bag for unto 2 months. To consume it, thaw it for 30-40 minutes at room temperature, heat it and eat.

Description
Chilli Garlic Noodles is an aromatic simple weekday meal option. Its flavours are rich in garlicky goodness, a little spice, and umami sauces.
Ingredients
- 150 g noodles
- 3 cups of water
- 2 tbsp sesame oil
- 8 cloves of garlic, sliced thinly
- 1 large red onion, sliced thinly
- ½ tsp red chilli flakes (use more if you like hot food)
- 1 tbsp soy sauce
- 1 tbsp white vinegar
- 1 tbsp hot chilli sauce (I am using sriracha here)
- 1 tsp black pepper powder, freshly ground
- Salt to taste (check notes)
Instructions
- Cook/boil noodles according to packet instructions. Or season a boiling pan of water with salt. Add noodles and cook them until they are soft and chewable.
- In another pan, heat sesame oil over medium-low heat and saute sliced garlic. Let the flavour of garlic slowly diffuse in the oil. When they start to turn golden, add thinly sliced onions and red chilli flakes and saute some more.
- Then add soy sauce, vinegar and chilli sauce (sriracha). Then toss cooked noodles in the pan and mix well so that the sauce is coated evenly on the noodles.
- Finally, add black pepper powder and salt (if needed). You can also garnish it with spring onion.
Notes
- When adding salt, please keep in mind that depending on which soy sauce you use, the dish can already be pretty salty.
