Cabbage Capsicum Beetroot Sabzi / Warm

INGREDIENTS –
- 2 tbsp olive oil
- 1 tsp mustard seeds or sarson keĀ beej
- 10 curry leaves or kadi patta
- 1-inch ginger, grated
- 1 green chili, chopped
- Salt, to taste
- 1 tsp red chili powder
- 1 tsp garam masala
- 1 medium-sized cabbage, chopped finely
- 1 capsicum, chopped finely lengthways
- 1/2 beetroot, chopped finely lengthways
- 1/4 cup roasted peanuts
- 1/4 cup chopped coriander leaves
INSTRUCTIONS –
- Heat oil in a pan. Add mustard seeds.
- When the mustard seeds crackle, add curry leaves, ginger
, and green chili. - Add red chilli powder, salt and garam masala.
- Add capsicum, beetroot, and cabbage and mix well.
- Cook for 10-15 mins.
- Turn off the heat and add roasted peanuts and coriander.
