Cabbage Capsicum Beetroot Sabzi / Warm Salad

Cabbage Capsicum Beetroot Sabzi / Warm Salad is extremely healthy, quick and delicious dish and serves as a sabzi with chapati or paratha and also as a warm salad that you can enjoy as is. Unlike traditional sabzis, we have kept the spice quotient low on this one so the intrinsic flavors of the vegetables can be relished. Enjoy!

Serves 3-4 people

Cooking time 15 minutes

INGREDIENTS –

  • 2 tbsp olive oil
  • 1 tsp mustard seeds or sarson keĀ beej
  • 10 curry leaves or kadi patta
  • 1-inch ginger, grated
  • 1 green chili, chopped
  • Salt, to taste
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1 medium-sized cabbage, chopped finely
  • 1 capsicum, chopped finely lengthways
  • 1/2 beetroot, chopped finely lengthways
  • 1/4 cup roasted peanuts
  • 1/4 cup chopped coriander leaves

INSTRUCTIONS

  1. Heat oil in a pan. Add mustard seeds.
  2. When the mustard seeds crackle, add curry leaves, ginger, and green chili.
  3. Add red chilli powder, salt and garam masala.
  4. Add capsicum, beetroot, and cabbage and mix well.
  5. Cook for 10-15 mins.
  6. Turn off the heat and add roasted peanuts and coriander.
